Always having a passion for good food and traditional agriculture, Walter Nicolau III was able to pair these together with a rich family history and culture to create Nicolau Farms. Walter and his wife Elizabeth have been tending to their herd of top quality dairy goats and creating delectable hand-crafted farmstead goat cheeses since 2000. At Nicolau Farms, quality is always top priority.
Nicolau Farms is one of the last remaining goat farmsteads left in California milking around 150 goats. By farmstead, we raise our own livestock, grow all of our own forage for feed, and produce farmstead cheeses right on the farm.
Our milk is sent directly from the barn to the cheese room where the cheese making process begins.
We also follow the natural breeding season of the goats which means they take a few months off during the winter to rest and prepare for their new kids in the spring.
However, we have some select chosen members of the herd which are milked year round providing a select few customers with our fresh chèvre* on a year round basis.
Our chèvre may vary throughout the year since Nicolau Farms is 100% Alll Natural and does not compromize or altar our high quality milk or cheese in any way. We also use All Natural cures and remedies on our goats using NO hormones, antibiotics, or conventional medicines. This All Natural wholesome milk is what makes Nicolau Farms' finished product so delectable and delicious.
* Chèvre is the French word for goat, and refers to young goat cheeses.
