-Fresh Cheese
Our cheese begins first with the highest quality milk from our goats which are raised 100% naturally and consume the highest quality feeds. The milk is processed with an old fashioned vat pasteurization method, which never heats the milk over 155۫ F. From this we are able to achieve the utmost quality, with our creamy, fresh cheeses which sometimes almost seem unpasteurized with a light texture and tangy flavor. This fresh Chevre is available in Plain, Garlic-Chive, and Spicy Red Pepper. During the holiday season a delectable Cranberry-Honey Pecan variety is available in limited quality.
-Aged Cheese
Our aged cheeses start with the same high quality milk and use old world Portuguese methods to create that artisan farmstead look and flavor. The cheeses are loved and cared for all by Walter and Elizabeth from the set to the affinage for their whole four to six months of maturity.
